Loaded Potato Skins

Listen, I’ve went through the dictionary I don’t know how many times but there’s no word that sums up how I feel about potatoes. French fries, roasted potatoes, crisps, mashed potatoes, hash browns, baked potatoes, it can even make vodka….. Seriously, this here for me is on the same level as sugar.

So it makes perfect sense that I had to stuff my potato skins with…. well….more potatoes. Perfect hot or cold, you can have these at a picnic, as finger food at a gathering and even at a bring and braai.I always say you don’t have to stick to a recipe and you can play around with your favourite ingredients. Explore with your creativity and load your skins with your favourites or whatever you find in the fridge.


*6 or more potatoes
*handful of diced mushrooms
*4 diced baby marrows
*Spoonful of pepperdews 
*Spring onions 
*any dressing or pesto of your choice.


  1. Set the oven on 220°  and pierce each potato several times and bake in the oven for 45 minutes until the skins are crispy.
  2. In the meantime fry your vegetables together and season with your favourite herbs or spices.
  3. Remove skins from the oven and allow to cool for ten minutes then slice each potato in half and scoop out potatoes with a spoon. Make sure you leave 1/4 inch intact.
  4. Brush or drizzle your skins with oil and season with salt and bake in the oven again until golden brown.
  5. Mash your scooped out potatoes together  with the vegetables and season. When the skins are done stuff them and drizzle with your favourite dressing, add pepperdews and spring onions.
