Vegan French Toast Roll-ups

Saturday morning watching Denis The Menace cartoon, hearing the sound of my father cutting the grass outside, my siblings and I still in pyjamas thrilled by the absolute joy of no school for the weekend. The highlight of the morning would be either pancakes or French toast. I must have been in primary school when I thought my sister was a food hero. Like how do you combine wet ingredients on bread and turn into a healthy dessert? French toast was such a big deal to me and the thicker the slice of bread, the better. We would top it off with spoonfuls of apricot jam and I am sure my mother just gave up on scolding us for finishing an entire loaf in one go.



I tried creating the veganized French toast for a while but I could never find the right ingredients to create the “egg-like” texture. It works with the chai seeds because of the gooeyness it has when it sets plus it’s a great source of protein. You could serve it with icecream, fresh cream, fresh berries, crushed nuts or choc chip cookies.

INGREDIENTS

*1 tbs chai seeds

*1 tbs golden syrup

*1 cup vegan milk

*1 tsp vanilla essence

*1 tsp ground cinnamon

*6 slices white or brown bread

*Chocolate or peanut butter

*1 /2 nuts of your choice

*cinnamon sugar (two spoons and 1 tsp cinnamon mixed together)

METHOD

1.Mix the chai seeds and milk together in a large bowl and whisk for 5 minutes then let it set for 10 minutes in the fridge.

2.Add syrup, vanilla essence and cinnamon in the chai milk mixture and stir until well combined.

3.Take your bread and cut the crusts around the corners off and then use a rolling pin or glad wrapper roll, gently roll the bread until flat ensuring you do not tear it.

4.Spread your peanut butter or chocolate spread on bread and slowly roll your bread tightly.

5.Dip your rolled bread into you chai milk mix for 30 seconds until all parts of the bread are covered.

6.In a large pan on medium heat, add a splash of oil and wait until pan is hot before adding your rolled bread.

7.Cook on one side for 4 minutes or until golden brown and flip on the other as well.

8.When cooked, place on a kitchen towel to drain oil off.

9. Roll your French toast in your cinnamon sugar mix.

10.Top with crushed nuts of your choice and serve with hot chocolate.
